I get those pre-spiced pork loins, throw a bunch of baby potatoes in the bottom of the crockpot, throw the pork loin on top, stuff some baby carrots in there, and let the whole thing cook all day. The juice and flavors from the pork roast cook the potatoes and carrots and the whole thing is super tasty.

Can somebody post or link the greek chicken recipe? I'd like to try it.

I use chicken thighs or leg quarters - no cutting needed. The BS chicken breasts would probably come out a bit too dry, although I suppose it would still taste pretty good. But it's pretty much foolproof with pieces like thighs. I find I don't need to add as much water (just about none), but ymmv.

I have black bean soup in the crockpot. Making a lot of quick easy stuff these days because the baby doesn't give me much time in the kitchen. I miss cooking!

Ypsi, here is the recipe for the quinoa burgers:

I did them as written just to try them. I think I remember Olive saying that she did a bunch of variations, like Greek with feta and Greek seasoning or Mexican or whatever. They are very tasty. I made the quinoa a couple of days ahead and put it in the fridge and then I made the patties in the morning and put them in the fridge so there was next to no work at dinner time. They are great for us for dance nights.

Tonight it's spaghetti. I said I should cook it because the kids don't like the way you do. He said "they've been telling me they loved it for three years!" all butt hurt. He takes jarred sauce, a lb of burger and somehow also uses too much oil so it's slimy. Yeah, what's not to love?

I have chicken breasts marinating at home but I am in the waiting room at urgent care with Ethan who has an ear infection. I think they will marinate another day.
