I bought my lunch at the cafeteria all last week, but I want to start bringing it with me, to save money and hopefully eat better. I'm kind of at a loss as far as what to pack, though. Sandwiches? Pesto? Black bean soup? (oh yeah, I'm a vegetarian. :lol)

For those who are on campus during the day, what do you do for lunch?

For that matter, what about breakfast? So far I've been relying on :coffee and drinking it during my first class.

Erin, check the snack thread in the Crunchy forum - some good stuff there.

I like many things rolled up in ezekiel or spelt tortillas - hummus, pesto, almond butter & jam, beans & rice of course, veggie pate... any old spread will do.

Now that it's Fall! Yay! I look forward to those huge organic fujis dipped in almond butter.

pasta is always good. Any leftovers, really. If you have access to a microwave, be sure to get some GLASS containers to reheat things in - plastic leaches baaaaad stuff into your food when heated.

This may sound wierd, but my favorite sandwich is soy deli honey sesame baked tofu, almond butter, honey mustard and avocado. It does tend to slide out of the bread, though. It is soooo good!

I also enjoy almond butter and tomato sandwiches.

Before I had to go wheat-free, I used to get a small seed baguette and eat that with plain old avocado - yummy!

hmmm. Now I'm hungry.

You made me hungry too. :lol Thanks for the suggestions. I'm going to go check out that thread, too.

A big fruit salad and a container of homemade yogurt is what I generally take if I have to be on campus all day.

A thermos of soup is tasty in the winter as well, with a couple of rolls on the side.

Another lunch I tend to pack -- whole grain bread, lightly buttered, sliced cheeses and a bit of lettuce. Very filling.

If I stop somewhere for lunch, I drop into Subway (there is one just off campus) and get a Veggie Sub. If I MUST have something hot then I grab a baked potato at Wendy's for 99 cents. Not ideal--I hate dropping money in that sort of fast food joint but it's pretty healthy and it is cheap.

I often do sandwiches and fruit, but sometimes I'll pack leftovers with one of those blue ice packs, and use the cafeteria's microwave.

This semester sucks though, because as the cc, there were a couple of good options for 2 bucks, if I didn't bring my lunch that day. At the university, everything is 5 dollars or more.

I always take something with me. My favorite? A whole wheat tortilla, lettuce or spinach leaves, grated carrots, avocado slices, a little grated cheese, and some sunflower seeds. Yum!
