Can we please stop saying "cheese" and "stuffing" in the same sentence? It's kind of hitting my gag reflex. 
I thought xanthan gum was a leavening agent? I use it in GF baking but had no idea it was a thickener too.

What about cornstarch? It isn't 0 carbs but there are fewer and it takes less to thicken. We use it cuz the kid is gluten free.
Oh. Coconut flour. I bet it would work too. I know it would. It's 0 carbs.

I always thought it was "stuffing" if you cooked it inside the bird, but "dressing" if you cooked it outside the bird, but in Texas, it is "dressing" either way.
